Abstract:In recent years, Terahertz(THz) technology has got a rapid development and has a huge potential applications in the inspection of food, medicine, biological macromolecules and other fields. In the field of food inspection, many food additives have their characteristic absorption peaks in THz frequency range. These finger spectra are possible to be utilized for the monitoring and analysis of food additives. It has attracted the attention of many domestic and international research groups. The research progresses of these different groups on the food additives by THz spectroscopy inspection and analysis are summarized. The problems of THz spectroscopic technology existing in the inspection of food additives are discussed. The future trends of development are outlook according to these researches.
